MIMOLE is a traditional paste recipe which includes more than 20 ALL NATURAL ingredients, produced in small batches under ancestral culinary practices such as slow toasting ingredients and volcanic stone grinding. It is ready to turn in to a sauce by adding liquid to it while cooking it. The Mole is used either as a base to build a stew or as a sauce to be poured over meat or poultry.
Black (Negro) mole: The traditional process of roasting the "mulato" and "pasilla" chiles give it a touch of smokiness that give it depth of flavor while the almonds, nuts and raisins give it just enough sweetness making this an ideal mole for fish, white meat like chicken and lighter preparations of pork, seafood, strong cheeses and vegetables.
